Start Fresh Falafel bowl

This start fresh bowl is a go to when you’ve lost your way a little…after the holidays its natural so feel a little overwhelmed with getting back to nourishing yourself, this is the bowl that will get you back on track and ready to get back to that healthy lifestyle. Best of all its so easy to prepare and if you put in a little prep work it will be even more speedy to prepare. So go ahead, give this one a go.

Ingredients

TIP – prep the falafel either on a Sunday for the week ahead or on the day of serving and you will have extras for lunch/dinner for the next few days.

Falafel

2 x cans chickpeas

1 bunch fresh parsley

½ bunch fresh dill

1tsp cumin

1tsp ground coriander

½ tsp cayenne pepper

2tsp baking powder

1 tsp salt & pepper

1tsp ground cardamom

½ tsp cinnamon

3 garlic gloves

For the bowl

1 cup red cabbage

½ cucumber

2 tbsp hummus (homemade or store brought)

Tomatoes

Fresh rocket

Brown rice

1 Bell pepper red or yellow

Steps

  1. Pre heat oven to 200c
  2. Wash and drain the chickpeas then add to the food processor along with all the other falafel ingredients. Blitz until the mixture is combined into a sticky mixture.
  3. Form the mixture into 12 balls and place on a lined baking tray. Press the falafel balls into patties and bake for around 45 minutes, turning halfway so they evenly become golden.
  4. Now prepare your bowl, add some brown rice (can be from a microwaveable packet) or some you have batched cooked for the week. chop all the vegetables that you want to use (any preference) I have listed some above that I use.
  5. Time to assemble the bowl – add your falafels, small handful of fresh rocket, some brown rice and all the fresh chopped vegetables along with a good dollop of hummus ( I sometimes add baba ganoush as well as hummus. Enjoy and feel great 😊
