GoodnessGlows Super Mixed Bean Salad
I cannot live without mixed beans in my store cupboard, I literally use beans in so many of my dishes (is that what every plant based eater says)? This salad is one that always gets the “can I have the recipe for this salad” it is so refreshing and super easy to prepare. It is an amazing side dish or can be just eaten as is with a slice of sourdough toast and some fresh rocket. Beans are incredibly good for us and contribute to a high protein diet, also packed with fiber, iron, vitamin C as well as vitamin B which ALL help us to be healthy, balanced, protects you from diseases and have that glowing skin we all want.
Ingredients you will need;
- 1 tin of mixed beans
- 1 lemon
- 30g parsley
- Handful of fresh mint or dried if you can’t get fresh
- 1 red pepper
- 1 tomato (if in season)
- 1 small red onion cut finely or half a red onion if you don’t have a small one
- Good pinch of Salt and pepper to season
- 1 tsp Onion granules
- 1 tsp Garlic granules
- Sprinkle of Chili flakes
- Sprinkle of mixed herbs
Method
Step 1. Rinse and drain your tin of mixed beans, then place them in a decorative salad bowl.
Step 2. Chop your parsley (removing the stalks as best as you can) along with your mint – chop the rest of the vegetables into small pieces and add them into your salad bowl.
Step 3. Squeeze your lemon onto your bean salad and season with all your seasonings.
Step 4. Enjoy my lovelies😉the salad can keep in your fridge for 7 days.
