BEST Tofu scramble

Guys, this is seriously such a perfect, wholesome, healthy, and tasty breakfast/brunch. It may sound a little strange but I can’t recommend enough, you testing this recipe out - it will literally be a staple and you wouldn’t believe its tofu. The flavours are incredible. Best of all, tofu is great for us. Its rich in nutrients and is a complete source of protein. A great brunch for entertaining family/friends who will be very excited and surprised at the delicious taste.

Ingredients.

1 x 300g block firm tofu

2 tbsp. tahini

2 tbsp nutritional yeast

1 tsp garlic granules

1 tsp onion granules

1 tsp turmeric

Half tsp mixed herbs

Good Pinch of salt & pepper

Steps

  1. Crumble the block of firm tofu (I like to use my hands) but can be done with a fork. Add to a frying pan together with all the spices, with a splash of water to cover the bottom of the pan. On a medium heat stir nicely so the tofu scramble is covered with the spices
  • Let the scramble become nice and creamy, you will know this by the water being absorbed and the scramble will look creamy. At this point add the tahini and stir again so its mixed into the scramble.
  • Once cooked, serve on sourdough bread with some juicy tomatoes and half a avocado. I always add a sprinkle of pumpkin & sunflower seeds for extra goodness and crunch.
