Quick creamy mushroom pasta

So quick to whip up, but yet so indulgent and delicious. This dish is a great weekday dinner that is super speedy and can be whipped up in 30 minutes. Not only is it yummy but is a great source of protein and fiber. Great if you decide to host friends or family last minute.

Ingredients

For the sauce;

100g cashews

100ml almond milk

2 tablespoons tamari 

2 tablespoon nutritional yeast

2 lemons (juiced)

Veggies for the pasta

1 onion (peeled and diced)

6 gloves garlic (peeled and diced finely)

2 packs chestnut mushrooms sliced (you can use any mushrooms you prefer)

1 tablespoon dried rosemary

500g pasta (any choice, I like spaghetti)

1 bag of fresh spinach

1 teaspoon salt & pepper

Steps

Step 1 – Start by making the sauce in a high-speed blender. Add all the sauce ingredients into the blender and whiz up until smooth, if very thick you can add a little more almond milk to loosen slightly.

Step 2 – place your pan with a drizzle of olive oil over a medium heat, once hot add your diced onions, let them cook down nicely till slightly golden. Add your teaspoon of salt to the onions and now place your diced garlic to the pan, stirring well taking care not to let the garlic burn.

Step  3 – Add your sliced mushrooms and rosemary, mix well with the onions and garlic. Let the mushrooms cook on medium heat for around 10 minutes. Meanwhile you can bring a large pan of water to the boil and cook your pasta according to the packet instructions.

Step 4 – Reserve a cup full of the pasta cooking water. Now we can finish off the mushroom sauce by adding the creamy sauce to the pan of mushrooms and let it all cook for a few minutes, then add your bag of fresh spinach, mix well letting the spinach wilt. Taste sauce and see if you need any more salt and add the teaspoon of pepper. Add the pasta water that you reserved and mix through the sauce, let it all cook for 5 minutes and then add your cooked pasta and mix well making sure the creamy sauce is coating the pasta. Step 5 – Serve up into your pasta bowls, adding another sprinkle of black pepper on top. Dig in and enjoy this indulgent yet healthy bowl of pasta:)
