Comforting warm green salad
The perfect comforting salad to enjoy during the cold months, while still being healthy and nourishing to your body. You will love this salad, takes around 35 minutes and will give you that satisfying feeling of feeling full. Also, great cold for leftovers the next day. I don’t know about you, but cooking once, eat twice is my holly grail.
Ingredients
2 packets microwavable brown rice or is cooking fresh 1 ½ cups brown rice
1 courgette
1 packet tenderstem broccoli
150g edamame beans
4 spring onions
1 bag fresh spinach
1 handful roasted almonds (chopped)
2 tablespoons tamari
2 tablespoons tahini
1 tablespoon toasted sesame oil
2 limes (juiced)
Drizzle olive oil
Pinch of salt & pepper
Steps
Step 1 – Preheat oven to 200c
Step 2 – Chop the courgette into semi circles. Place them onto a lined baking tray along with the broccoli stems, drizzle olive oil and salt and pepper. Mix well and cook for about 15 minutes. While they are cooking add your edamame to a pan of water and let them boil for 5 minutes (if using frozen edamame).
Step 3 – if using microwaveable rice cook according to the packet, same if cooking from fresh. You can now prepare your dressing by adding the tamari, tahini, sesame oil and limes into a cup and mix till combined, set aside.
Step 4 – Combine your rice, cooked broccoli and courgette, edamame, chopped spring onions and chopped almonds, along with the spinach – pour over the dressing over and mix well. I like to add a sprinkle of pumpkin and sunflower seeds for an extra crunch
