Seriously Special High Protein Roasted Sweet Potato Chips

Now let’s please give thanks to sweet potatoes!! They really are something special and when cooked correctly they really do have the wow factor. Packed with goodness, they are high in protein so always a winner and they contribute to our health by being high in fiber and antioxidants that promote healthy gut and brain health.

When first starting on my journey to eating more plant-based food, cooking sweet potatoes was one of my first experiments. As I have always heard they are so healthy for us, so I simply had to start there. Seasoned well and roasted really does make the humble healthy sweet potato a delicious side dish.

Some of my favorite ways to add sweet potatoes into my diet each week is by meal prepping on a Sunday and making a whole container worth of roasted sweet potatoes coins, to add to lunches/dinners during the week. Also, when I am hosting family or friends these roasted sweet potato chips are great for dipping in homemade hummus as a nibble before dinner.

These are great eaten during the summer months - cold in a salad, picnic, or BBQ. Equally they  are also very delicious hot in the autumn and winter months.

Ingredients you will need;

  • 3 sweet potatoes (washed and dried in kitchen roll)
  • Olive oil
  • 2 tablespoons Smoked paprika
  • 2 tablespoons Garlic granules
  • 1 tablespoon Onion granules
  • 1 tablespoon Flaked Sea salt
  • Good pinch of Pepper
  • Half tablespoon Chilli flakes (optional)

Step 1. Pre heat oven to 200c

Step 2. Prepare your sweet potatoes by washing them in cold water to remove any dirt, dry them off with kitchen paper.

Step 3. Cut your potatoes in half horizontally then cut each half again horizontally into 3 to form the shape of chips. 

Step 4. Place on a lined baking tray and spread them apart, add 1 tablespoon of olive oil and then sprinkle all the seasonings to the sweet potatoes and with two spoons mix the sweet potatoes so that all the seasonings are covering each chip

Step 5. Place baking tray in the oven and roast for around 40 minutes until golden and crisp. Once cooked, remove baking tray from the oven and leave to rest for a few minutes to cool slightly.
