Perfect Sourdough Toast with High Protein Smashed Avocado
Ok, so I know this one is a very simple recipe, but it is one of my all-time favorites!! I love avocado on sourdough toast. I would say it’s a breakfast, brunch, or lunch as it is always a guarantee to please and hit those taste buds and fill you up nicely. It is also a fav with my kids too and being a mama, it feels like such a win when your kids are eating nourishing healthy food along with you.
Avocados have 4grams of protein per cup!! Which is around half an avocado, I always team my avocado on toast with toppers such as pumpkin and sunflower seeds, these are again high in protein and also contain magnesium. Just adding more goodness to your brilliant body, its all about the goodness glows lovelies.
You will need;
- Sourdough loaf
- 1 ripe avocado (this is for 2 slices of toast)
- Salt and pepper to season
- Sunflower seeds & Pumpkin seeds
Additional toppings could be in season Tomatoes, fresh Rocket (which is divine with the toast), pickled Red Onions - this is all preference so go with what combinations you like. I ALWAYS add chili flakes, as I love spicy additions to my food.
If you do not have the seeds I have listed above, you can leave them out, but they add such a goodness addition to your food and the texture is perfect with the smooth, soft avocado. The benefits include a great source of magnesium, potassium, and fiber. They are also loaded with Vitamin E, which is amazing for pregnancy, and a great natural skincare as it keeps our skin glowing! Who wouldn’t want that, right?!
How to prepare:
STEP 1. Start off by slicing your sourdough and toasting in the toaster. Again it all comes down to preference but I like my toast slightly over done as I like some burnt-crispy crusts.
STEP 2.Cut your Avocado in half and remove the stone. At this point your toast should be toasted and, on your plate, ready to be smothered with your glowing avocado. With a spoon take out one half of the avocado and put it on a slice of toast. Then with a fork mush and spread the avocado across your toast.
STEP 3. Now, season with salt, pepper, chili flakes (if you like spice) along with your pumpkin seeds and sunflower seeds. Don’t hold back on adding any other toppings you may like.
STEP 4. Time to sit back, and enjoy this tasty Goodness Glows meal, that not only nourishes you but also tastes freakin divine!!
