6 ingredients BEST Vegan Choco cookies

Who doesn’t love cookies?! VEGAN easy homemade cookies!!! I am obsessed, there is something so comforting for me, having fresh homemade cookies stashed away, to be enjoyed with a cup of something warm and a nice cosy chat. I bake these cookies probably once a week sometimes more. We all love them in my house. I bake them when visiting friends/family as a little homemade gift. The best part for me is that they are the most simplest cookies to make, all the ingredients go into one bowl, mix, shape and bake😊 they taste the BEST and remind me of my 'use to be' favorite cookies I use to eat as a child from a supermarket that was no good for me, now I have made these delicious cookies with just 6 ingredients and best part is, its all natural ingredients that contains no animal products, and I know my body is thanking me for them - winning is all I can say!

Ingredients you will need:

  • 3 tablespoons coconut oil
  • 180g coconut sugar
  • 200g plain flour
  • 2 tablespoons baking powder
  • 5 tablespoons plant milk of choice
  • 120g 70% dark chocolate (chopped into chunks)
  • Good pinch of salt

Step 1 – preheat your oven to 180c or 420f

Step 2 – Melt your coconut oil either in the microwave, over the hob on a low heat, making sure however you do it, the oil doesn’t burn (I use a microwave) and put it on for 30 seconds at a time so that it is in a liquid form. Lets leave to one side and move on to step 3.

Step 3. Grab a large bowl, mix your sugar, flour, baking powder and salt. Give a good mix being careful to make sure there is no lumps.

Step 4 – Pour your plant based milk (I usually use either oat or almond) and cooled coconut oil into your bowl of dry ingredients, I start off mixing with a spoon just to get the dough started. Now add your chocolate chunks and move onto mixing with your hands to form a dough.

Step 5 - Shape your dough into 12 balls, place them onto a lined baking tray leaving at least 3cm apart from each cookie dough ball as they will expand.

Step 6 – bake for around 12 to 14 minutes until golden, I always check after 12 minutes which seems to be perfect.

Step 7- Once your cookies are cooked, leave them to cool on their baking tray for around 5 minutes, in this time the cookies will harden.

Step 8. Make a luxurious green matcha latte, then take a cookie and enjoy the perfect balance of gooey, chewy and crunchy cookie Hhhhmmmmm😊
